The inspiration came partly as an AIA Financial Services Consultant, I see the importance of good health for a good quality life. I re-invent the dish because I want to achieve the similar taste of the local food without compromising too much with the taste and to offer a much healthier option.
Another reason is that my husband is a meat lover and I hope this will help him to have healthier options. My wish is for my family to eat and live healthily. Both of us like to make this a part of our lifestyle.
Food can taste equally good, and even better, with the use of healthier and quality ingredients! Being healthy means winning in life!
How we gave it a twist to make it a healthier version:
500 grams Chicken Breast
3 Cloves Garlic
1 Large Shallot
3 Stalks of Lemongrass
3 centimeters Blue Ginger (Galangal)
3 centimeters Young Ginger
1 teaspoon Cumin
1 teaspoon Turmeric
60 grams Palm Sugar (Gula Malacca)
1 Lime (pressed for juice)
1 teaspoon Fish Sauce
1 teaspoon Virgin Coconut Oil
2-3 pieces Lime Leaves
A pinch of Salt and Pepper
1 tablespon of Greek Plain Yoghurt
1 tablespoon Sweetened Dark Soya Sauce (*optional)
1 stalk Lemongrass
1 teaspoon Virgin Coconut Oil
1 pack Wooden Skewers
200 gram Ground Roasted Peanuts (cholesterol free)
75 grams Walnuts
75 grams Almonds
3 cloves Garlic

3 pieces Chili Padi (optional)
6 pieces Dried Chili
1 Lime (pressed for juice)
1 Lime Leave
1 tablespoon Honey
1 teaspoon Fish Sauce
60 grams Palm Sugar (Gula Malacca)
2 tablespoon Virgin Coconut Oil
A pinch of salt
1 cup water (to be added upon preferred choice of thickness)
1 Avocado
1 Lime (pressed for juice)
1 teaspoon Honey
5 grams Palm Sugar (Gula Malacca)
2 tablespoon Plain Yoghurt
A pinch of Salt and Black Pepper
½ cup White Rice
½ cup Brown Rice
3-4 pieces Pandan Leaves
1 piece Bay Leave
1 stalk Lemongrass
2 cups Water (added according to preference)
1 large Cucumber, cut diced
1 large Tomato, cut diced
1 large Shallot, cut diced
1 piece Green Apple, cut diced
Coriander Leaves, wash
Banana Leaves, wash and cut preferred shape
