Nowadays I observed more and more people falling sick easily, always stressed and aging rapidly. This is partly due to the food they eat, the amount they eat and when they eat. Busy people also tend to skip breakfast but overeat during lunch and dinner. As the saying goes, " Eat like a King for breakfast, like a Prince for lunch and like a pauper for dinner." People also eat food that is too oily or too much fried food too. Children too, do not know the limit of eating too much fried food as well as snacks. Adults also often have no time to cook their own meals and thus will often go out to eat oily food. This is extremely bad for ones' health. If this bad eating habits continues, many people will fall sick and die at a much younger age which is something no one wants. I am therefore inspired to cook delicious and healthy meals for my family and would like to share my love to everyone.
The dish, Nasi Lemak, is loved by everyone, usually served with deep fried juicy chicken, sambal chilli, deep fried ikan bilis, deep fried peanuts, fried egg, coconut rice and a few slices of cucumber. However, this dish cannot be eaten often as it is unhealthy, filled with deep fried ingredients as well as chilli. Many people try to pair it with more cucumber to make it more healthy.
To make Nasi Lemak healthier, I use natural blue pea flowers extract to dye the rice of my "Rainbow Nasi Lemak" to give another layer of aroma, I also replace the cooking oil with coconut oil to fry the egg, which is healthier, an air-fryer is used to fry the chicken, ikan bilis and peanuts. Together, this makes the dish healthier and fresher.
15-18 dried blue pea flowers
2 tbsp hot water
2 cups jasmine rice
200ml organic light coconut milk
3 pandan leaves (tie a knot)
3 sliced galangal
2 lemongrass (cut into 2 sections each)
2 shallot (smashed)
4 Indonesian bay leaves (optional)
3/4 tbsp salt
1/2 tsp sugar
One whole cucumber
4 chicken thigh meat
5 shallot + 5 garlic (to be pounded)
1 tbsp curry powder
1 tsp turmeric powder
1 tsp coriander powder
2 tsp salt
Pepper
2 tbsp corn starch
15 dried chillies (soaked and cut into small pieces)
4 red chillies (cut into small pieces)
6 bird eye chillies
8 shallots
6 garlic
1 thumbsize belacan
100-150g palm sugar (gula melaka)
1 tbsp salt or to taste
Add on 1 sliced onion
A bunch of kangkung, wash and cut into 3 sections
1/4 cup sambal chilli "D"
4 eggs
1/2 cup Peanuts and 1/2 cup Anchovies
Slice the cucumber in round shaped and set aside.
Use a round cookie cutter to create the stack.
First, compress the coconut rice on the most bottom. Second, a layer of sliced cucumber. Third, sambal kangkung. Fourth, the fried beaten egg. Fifth, the air fried chicken follow by a layer of sambal chillies. Last but not least, the roasted anchovies and peanuts.
