I am a nursing mother of two lovely girls, an infant and a toddler. Having a toddler who wants to eat what the adults eat, I have to adapt many recipes just for my toddler. When it comes to food for my family, I also have the subconscious ‘kiasu-ness’ to improvise every recipe to incorporate nourishing components.
I have selected to share my Laksa recipe because my family loves it. By separating the broth before adding the rempah, I can make fish soup light yet tasty and this pleases everybody in the family.
Like most Asian mothers, I have always cooked in estimation or go with sensing. To prepare for this dish for AIA Vitality Healthy Cookout, I actually measured my ingredients and have a ‘feel’ first before cooking. I took pictures along the way to remind myself of the cooking steps. My partner for this competition, who is also my husband, constantly brings out the best in me. Other than encouraging me to enter for the competition, he also practised dry runs with me and we planned out how to manage the tasks and logistics to which I am very thankful for all his help to make this one of the finalist dishes in the Showdown.
