When we decided to take part in this competition, we thought of many famous Singaporean dishes.
However we feel that many of them can be hard to prepare. Therefore we set my mind thinking of a signature dish that can be easily prepared at home; something that is simple; something that can be made using everyday ingredients; something that anyone can easily prepare as long as he or she is willing to stand in front of the stove.
It is our belief that home should also be a place for simple but good food, paired with our love for noodles, we chose the Hokkien Mee.
With the intention of keeping it simple and healthy, I've omitted traditionally used ingredients such as squid, pork belly and pork lard and replaced them with healthier alternatives such as chicken.
